I've been dreaming for a Mustang since I was a little kid, and as a 25 year old I've been working hard for the last years to afford my dream car. Finally my dream came true!
Anyway, as a noob I have some questions about the Mustang:
- I'm going to change the horse in the grill. I know I have to remove the bolt under, but what size is the bolt? In Norway where I'm from we use metric tools, but I guess I have to use tools in inches?
- There are some places where the paint is chipped off. How can I find the color-code for the paint? Do you suggest a type of paint filler?
- I have an issue with the engine. I was driving for an hour yesterday and it was running as a clock. However after an hour or so when I was driving in approx 50 mh the rpm fell and it sounded like the engine was being choked. I had to stop and start the engine again and it happened several times when I was driving. I thought it could be moisture in the distributer cap but the cap is almost new and it was dry. The previous owner have disabled the choke so I thought maybe the choke was on, but it was not. Any thoughts about this issue?

The paint color code should be listed on the tag attached to the driver's side door. It's the letter where it says "color".
I'm not sure why your engine is having trouble, but check your fuel filter. It's possible that it could be clogging up and that might cause your problem.
Welcome! My grandmother was from Norway. It sounds like you may of had vapor lock. That's where the fuel in the carburetor bowl boils off due to engine compartment heat. The carburetor is vented to the atmosphere. Not being under pressure like in a EFI fuel rail but being in an open environment it's going to have a much lower boiling point and turn into vapor.
If your car still had the original door tag it should have the paint code. Any good auto body supply shop should be able to mix up a test color to see if it matches the current paint. If not the shop should be able to match the paint one way or another.
Post some more info and pictures of your car. This will help us a lot down the road. After 50 plus years a lot can be changed on any car since the factory. Well be able to determine more accurately what you have today.

Yeah, invest a complete set of SAE (English) tools.
Some ideas:
Fuel pick up in the gas tank could be getting clogged. Shut off car and crud falls off. Then gets sucked up against the pick up tube again...
Bad gas
Check for arcing inside the cap (not just moisture).

Your wrenches will need to be 1/4, 5/16, 3/8, 7/16, 1/2, 9/16, 5/8, 11/16, and 3/4. That's pretty much it for a Mustang. Mostly you'll be using 1/2 and 9/16.

If you are having vapor lock you may want to swap out your carb spacer, if you have one for a Phenolic (heat shielding) spacer. This is the one I bought, https://www.summitracing.com/int/parts/trd-2582/overview/ It includes a PCV port.
