..I'm replacing the convertible top myself on a '73, and am looking for the best adhesive and staples to use.
I was thinking of using 3M's Black Super Weatherstrip adhesive and either Arrows Monel, or Stainless Steel stables.

Anyone experienced in replacing tops, and can offer advise ?

I used a Arrow electric staple gun to do mine. You got to press hard and put a lot of staples in the fabric. I did not use any adhesive in the stapled area. I used 3M weatherstrip adhesive (yellow) on the side fabric where it glues to the frame and at the top front bar or bow. Its holding together fine.
