I have had both, 65/66, & 67/68 I like them both for different reasons. I prefeer the 69's for their agressive look with the quad headlights. My favorite was my 68 j code GT Coupe..... so far.

The 65-6 cars were strong enough for a man, but made for a woman...lol
The 67-8 cars were made for a man, and Steve McQueen proved it.
Either model, I love them all! I have much respect for Mustangs of all years. They all had a purpose, and always looked decent. In many ways, the end product of each generation was an answer for the times, and Ford delivered for the most part.
As far as value and desireability, there's an *** for every seat. We are now in an era that a big block = $$$$$. The "movie cars" were pulling in the big money for a while, but now I think that phase is slowing. To keep it fair, compare prices of the basic 6 cyl cars between generations and you'll get your baseline answer.

As far as simplicity....You can't beat the '65-'66.. Simple, Functional, The interior wraps around you and fits you like a glove. The dash and door window mechanisms are twice as complicated with more parts in '67-'68's.... and the '69-'70's are three times as hard with three times as much parts!...and so on and so on...!! That's just how it goes!
I've had a few '65's...and lots of '66's... The '66 does have lots of hidden improvements and extras over the '65's... It's basically a refined '65 How can you go wrong??lol...
Until the last few years it was definitely '65-'66. Big blocks and the like have always brought a premium, but comparing a '66 vs. '67 C-code car consistently (again, historically, and Nicholas Cage notwithstanding) favored the early cars. The emphasis in early repro parts production, magazine coverage, etc., etc., was clear.
That said, I've always like the '67-'68. It may be a bit gaudy, but I'm a sucker for that exterior decor group ribbed back panel, and the roof console is entirely too cool. I remember the first time I saw a California Special, back in 1978 or so, and I thought it was about the coolest looking car on the planet.
I'd like to think my vert would more than stack up against a 289/302 GT 67-8 car (certainly the volume they originally sold in did)...but by the time I add up all my costs I'm still underwater regardless! Oh well, you know what they say about opinions...get what makes YOU happy, car's are almost never a good investment.
I like the 67-68 better because the engine bay is larger and turn signal hood looks cool.
