Knives
 
We've bought single piece kitchen knives from time to time. Most times they're not worth the price. What brands have you found satisfactory?

I use a Rapala feliet knife the most in the kitchen.

victorinox for single knives, they arent fancy but my fillet and boning knives have been excellent for me.

I got a Victorinox chefs knife last Christmas, considering the giver it must not have been expensive. Excellent out of package sharpness but I haven't been able to get it as sharp again and I know how to run a whetstone. Still pretty good sharpness but thin and light blade. i gouged it on a bone :(
A good all around knife brand is Ontario knife Co.(made is USA) Good steel to last a lifetntime.

We have a set of 6 from Henckles. Made in Spain. cost around $225 several yr ago. I consider myself and the Wife home "Chefs" so we can appreciate a knife set somewhat better than what you will get from Macy's for half the price. IMO you do get what you pay for--to a point. I thought the Wife was nuts when she dropped over $200 but they are used daily here and I have no regrets. I will say that you need to get them professionally sharpened at least once a year-they do a WA better job than you can at home. Just my .02

If you've never seriously tried one, get a carbon steel kitchen knife.
They're easy to sharpen, take a wicked sharp edge, and are not hard to maintain with a good steel. Granted they need a bit of care; don't throw them in a dishwasher or leave them in dirty dishwater to soak. But people that do that shouldn't be allowed to use anything but dollar store serrated knives. The only real difference for me is that I'm a little more quick to rinse and wipe down my carbon knives than my SS knives.

If you're uncertain you can get Old Hickory or similar knives for $1 at thrift stores and yard sales. Or spend a couple bucks more and get a new one. I have this one and it gets used more than my Henkels.

Sabatier still makes a line of carbon steel traditional styles that won't break the bank.

Just like cars, it depends on how you use it. I used to sell knives a looooong time ago, and have generally kept abreast of the field.

First, you really only NEED one good knife. Most chefs prefer to have 4-5 depending on tasks. Don't fall into the trap of 25+ knife sets that cost huge amounts unless you have a proportional budget.

As mentioned, Henkels are an excellent brand (German rather than Spanish) as well as Wusthof. But be careful to differentiate inside the brand name. Each brand has a top tier (for Henkels they have two men in the icon rather than one). Usually the difference is between a forged knife vs a stamped. The stamped knives are significantly less expensive and you get what you pay for.

If you are a true dyed in the wool, buy "Made in the USA" guy, Cutco is a great knife for even less money than what I listed above, but they do specialize in kits, so it is easy to get carried away.

Then there are Japanese knives, which have the same quality continuum. Most people prefer "western" knives unless they have specific needs for a Japanese knife. (I'm not going to get into all the various blade shapes and differences in edges).

And then (just like cars) you can go custom. They are works of art, but generally so expensive that few tread in this realm. Again, just like cars, there are entire forums and magazines dedicated to enthusiasts.

I bought my mother a set of Wusthof years ago that she still swears is one of the most used gifts she's ever gotten.

Those would be in my wish list until I won the lottery . Crazy $$$ for steak knives

We have a set of Sabatier's that we've had for some time, good knives. We also have Chicago Cutlery but I always grab the Sabatiers...

CUTCO all the way 100% warranty and they will come to your house, leave a replacement set while they sharpen your set. Usually upon returning your knives they GIVE you their last new promotion knife free. 20 yrs no issues whatsoever.
